BBQ Meatballs, Rice & Green Beans

Amounts of all ingredients can be changed to accommodate the desired number of servings.  This can be ready fast; cooking the green beans is the step that requires the most time.  I had enough rice & green beans for about 5 servings.

French Green Beans (Costco) - It's a 2 pound bag.  Wash, trim & then boil the beans for 30 minutes or until desired tenderness. (Then I freeze half of the batch.)  The sauce amounts are for one pound of cooked & drained green beans:
     1/4 cup Costco Pesto
     1/4 cup Italian Dressing
     2 to 3 tablespoons lemon juice

Start Meatballs & Rice after you've started your green beans.
Meatballs (Costco) - cook in oven for 15 minutes, according to package.  I usually count 5 meatballs per person.
Rice - Bring 2 cups of water to a boil, add 1 tbsp butter. Then add 1 cup rice & boil for 13-15 minutes until done.  When rice is done, add 2-3 tbsp more butter, garlic salt, parsley & 2-3 tbsp lemon juice.  

Serve as pictured, rice, meatballs & BBQ sauce; Green beans on side.  I like Stubbs BBQ sauce because it is relatively low in sugar but full of flavor. Enjoy!
